Y8's Eggless cooking experiments

With very little eggs to be found on the shelves the Y8's have been experimenting with google-inspired replacements for the eggs.

We researched google to find some ideas to replace eggs in our traditional recipes of cookies and muffins. The options to replace 1 egg were:

1/4 C Apple sauce

1Tb Chia seeds soaked in 3Tbs water

1Tb Flax seed soaked in 2 1/2 Tbs warm water

2 Tbs Arrowroot + 3 Tbs water

1Tb Vinegar + 1 tsp Baking Powder

3 Tbs Aquafab (Liquid from a can of chick-peas)

1/4 C Apple sauce

1/4 C Buttermilk

1/4 C Lemonade

1/4 C Yoghurt

1C Mashed Banana

Students didn't get to choose what they wanted to replace their egg with, so they picked out of a bowl their replacement option.  But they were able to change up the flavour of their muffin.  To our surprise all the options worked! But the students have some tips for home bakers:

1.  Remember the baking powder as they do need to rise!

2. Cocoa hides the green avocado colour in a muffin

3. Don't overmix!

4. Savoury muffins go well with aquafab

5. Chia seeds can be physically off-putting in a blonde muffin so hide with cocoa or make poppy seed based muffins. They also can add a little crunch so be aware of potential texture issues. 

Which one would you use??

We also tried the same options with the chunky chocolate cookies that we make in Y7 and found they all worked well, although some better than others for flavour eg lemonade and buttermilk were the favourites.
